Cognac, the prestigious brown spirit, is a brandy that must be produced in the region of Cognac, France. Likewise, Armagnac must be produced in it's respective region. If you love rap, you've probably heard about the love of cognac by many a rap musician. Although there are several classifications, such as Grande, Petite and Borderies, the common age statements are: VS - very special/superior (at least 2 years old), VSOP - very special/superior old pale (at least 4 years old) and XO - extra old (at least 6 years old).

Brandy, however, can be made anywhere in the world when wine is distilled. Common examples are from France, Spain, the U.S., Grappa from Italy and Metaxa from Greece. Many flavoured brandies or spirits distilled from other fruits are also available such as Calvados, apple brandy from France.
According to the Official Mexican Standard for Tequila (NOM), it must be made from the blue agave plant grown in the Appellation of Origin: Tequila Territory. It includes municipalities from five states: Jalisco, Nayarit, Guanajuato, Michoacan and Tamaulipas. There are two types of Tequila: 100% Blue Agave and Tequila Mixto (at least 51% Blue Agave). Five further classifications are:
Tequila Silver (Blanco, Plata, White, Platinum): aged less than 4 - 8 weeks with no additives or colourants
Tequila Gold (Joven, Oro): may be 100% Agave or Mixto with added flavours or colours.
Tequila Reposado: aged 2 to 11 months, taking on the colour and flavour of the barrel.
Tequila Anejo (extra aged): aged a minimum of 1 year in barrels less than 600L.
Tequila Extra Anejo (ultra aged): same rules apply as Anejo but must be aged at least 3 years.

Sotol, the state drink of Chihuahua, is made from Desert Spoon, which is not an agave plant. It is also made throughout Mexico.
